i’ve read about fincher films and some others where the film is shot at one t-stop the entire film, like 2.2 or whatever.

Assuming the iso stays at 800.

how are the exposing properly,

just using ND filters?

s are an option, but you can just light to the extend that you really need it, and if you are not in control of the light, then nd`s are your safest bet.
