Do you ever use diopters on spherical lenses?

I do, yes. I generally prefer them to using a close focus lens.

I have a project where I’ll need to use one for some close ups of inserts and I’m having a hard time finding info about magnification. When would you use a +3 over a +2 or +1 for instance. On a 35mm signature prime for example how close could I get with a +3 diopter?

You could easy calculate the maximum focus distance.
1 diopter is a 1 meter focal length.
When you set your focus distance on the lens at infinity an add a 1 dioter, then your far focus distance is set at 1 meter.
with diopter 2 is a 0,5 meter
with diopter 3 is a 0.33 meter
Formula is 1m/d=far distance (m)
Near focal length is more difficult to calculate.
